Please note: The following links discuss using Panoply 4. However, the plot controls interface was completely re-written in Panoply 5. In particular, the older interface used tabbed control panels at the bottom of the plot window, but in Panoply 5, these panels appear as one or more floating control palettes, whose visibility is managed via items in the Window menu.
